Zucchini with Tomatoes

Turkish: Zeytinyagli kabak

A perfect summer dish and a favorite meze [Wikipedia] which is served cold with Raki [Wikipedia] in Turkey.

Ingredients for 4:

3 zucchini
3 tomatoes
2 cloves of garlic
1 onion
2 carrots
½ dl olive oil
1,2 dl hot water
½ tsp black pepper
2 tsp dried or fresh mint leaves
Chili pepper flakes
Salt

Directions:

  • Cut the zucchinis first into four lengthwise and then in 2 cm slices
  • Chop carrots in half rounds
  • Heat the olive oil over medium heat.
  • Add chopped onions and sliced garlic, and saute until onions are softened
  • Add carrots and stir for 3-4 minutes.
  • Pour in tomatoes and cook until they start to look like a sauce
  • Add zucchini, salt, pepper, mint leaves, and water
  • Cover and cook over low heat for about 30-40 minutes, until zucchini is soft
This dish goes well with rice, bread, and yogurt. It can be served hot or cold.

Tomato Sauce on Bread

This is a nice and quick. This weekend we decided to bake a nice bread. While thinking what to have on it, we ended up with this nice sauce.Tomato Sauce on Bread

Ingredients:

500 gr tomato cross
1 big size onion, chopped
5 cloves of garlic, chopped
1 bunch of fresh parley, chopped
1 tsp mint
1 tsp chili flakes
½ tsp black pepper
salt

Directions:

  • Fry the onion and garlic until soft
  • Add tomato cross, parsley, mint, chili flakes, black pepper and salt
  • Fry for 10 minutes
  • Let it cool down
  • Let it wait for a day in the fridge

Especially recommended on freshly baked (see recipes here and here) bread.

Oven Baked Fish Pilaki

Turkish: Firinda Balik Pilaki

Pilaki is a style of Turkish meze [Wikipedia] and may refer to several dishes that are cooked in a sauce made out of onion, garlic, carrot, potato, tomato or tomato paste, sugar, and olive oil. Beans prepared in this style (fasulye pilaki, with white beans, or barbunya pilaki, with borlotti beans) are served cold, garnished with parsley and slices of lemon. Fish pilaki is also a popular recipe. In Greek cuisine, this style is known as plaki.

Ingredients for 4 persons:Fishpilaki

3-4 tbsp olive oil
4-6 fish fillets
1 onion, halved and thinly sliced
3-4 garlic cloves, thinly sliced
1 carrot, thinly sliced
1 potato, petite diced
2-3 tomatoes, diced
1/2 bunch parsley, chopped
juice of 1 lemon
1 lemon, thinly sliced
1 tsp sugarsalt&pepper

optional mushroom
celery root, petite diced

Directions:

- Heat olive oil. Add onion. Cook until soft.
- Add carrot. Cook for a couple of minutes. (if you are using mushroom, add now)
- Add potato. (if you are using celery root, add now). Cook until vegetables are soft.
- Add tomato, garlic, sugar, salt, and 5 dl of water. Cook until the cooking liquid is almost absorbed. Add half the parsley.
- Spread half of the vegetables on a oven dish. Place the fish on top.
- Cover with the rest of the vegetables.
- Season with black pepper. Pour lemon juice and place lemon slices on top.
- Cover and bake in a preheated oven at 180-190 C for 30 minutes or until the fish is tender.
- Sprinkle remaining parsley and serve

Oven Baked Vegetables

We ask the same question to each other almost every day, what shall we eat? This is one of the favorites, it’s easy, it’s fast and it tastes fabulous. Enjoy!

Ingredients for 4 persons:Oven baked vegetables

8 potatoes
4 tomatoes
2 paprikas
10 shallots
6 garlic cloves
1 small size cauliflower
4 carrots
8 Brussels sprouts
½ dl olive oil
1-2 tbsp parsley
1 tbsp mint
chili
salt

Directions:

- Peel shallots and garlic cloves
- Chop the rest into similar sized pieces
- Put everything on an oven tray and mix

- Bake in oven until they’re soft and the edges are brown, 230 C (about 30 minutes)

You may add different vegetables, spices and herbs depends on your taste or what you have at home.

Recommended with creamy yogurt dip.

Menemen

Turkish: Menemen

This is probably the most popular egg dish in Turkey that can be made without uniquely Turkish ingredients that could be hard to find.

Menemen can be defined in a couple of different ways such as Turkish breakfast specialty or lazy dinner option or great summer dish. However you define it, it’s delicious. Best part of all is whether you are a great cook or a poor one, you cannot go wrong with Menemen; the ingredients secure the taste. Must-have traditional ingredients for Menemen are egg, tomato, onion, pepper (preferably banana peppers), and parsley. Try it, you will like..

Ingredients for 4 persons:Menemen

2 eggs, well-beaten
10 juicy tomatoes, grated
2 medium size onions, finely chopped
3-4 fresh peppers, finely chopped
1-2 clove(s) of garlic, chopped
1 bunch parsley, finely chopped
2 tsp spicy pepper flakes
1 tsp black pepper
1-2 tbsp oil or butter
salt

Directions:

- In a frying pan heat oil and add onion and garlic. Cook on medium until they’re soft and then add fresh peppers.
- Once they’re cooked, pour in tomatoes, salt, and pepper. Wait until tomatoes cook down a little.
- Stir in beaten egg. Stir constantly.
- Right before eggs are cooked, add chopped parsley.
- According to your taste, you may add a little cheese on top.
- Serve with bread. The common way of eating Menemen is to forget about the spoon and use pieces of bread instead.
