Cow-pea Salad

Turkish: Börülce Salatasi

Here is one of my favorite salads. It’s especially perfect for hot summer days. My mum and grandmother used to prepare is when I visit them in Turkey. Actually they usually ask me beforehand and when I arrive, a long list of meals, salads and deserts are already waiting for me. I like this way :)

Ingredients for 4 persons:

1 kg of Cow-pea (canned version also works)
1 lemon
3-4 cloves of garlic
1 dl olive oil
Mint
Parsley
Sumac
Salt

Directions:

  • Boil cow-peas until soft
    (if canned, no need to boil)
  • Let it cool down
  • Smash the garlic
  • Add lemon, garlic, salt, mint, parsley
  • Mix all
  • Decorate with sumac

Rita's Berry Cake

This is my mum’s standard cake when we are visiting. Why? It’s easy, it’s sweet for A, a bit sour for me, and not too unhealthy.

Ingredients for 8:Ritas berry cake

Ready pie dough with oat (“mördeg”)

Filling:
3 dl vanilla yogurt
2 eggs
2 tbsp sugar
1/2 lemon
2 dl berries (or 1dl jam) **

** I used the classic mix of blueberries and raspberries.

Directions:

- Spread the pie dough in a pie form. (ø 30 cm) Make sure it is covering both bottom and sides.
- Whip eggs and yogurt
- Add gridded lemon peel and a little lemon juice (can be left out if you are not a fan of sour)
- Add sugar and mix until smooth
- Spread the mixture in the pie form
- Add berries on top
- Place in the middle of the oven, in 200 C for 30 min, until the edges become brown and the filling is no longer loose.

Enjoy with a cup of coffee or juice!

Potato Salad

Turkish: Patates Salatasi

One of my favorite salads. Perfect for hot summer days. It’s a little sour. I recommend it with yoghurt. If you like potato you will like this salad.

Ingredients for 4-5 persons:Potato salad

8 Potatoes
4 Tomatoes

2 Spring Onions

1 Onion

½ dl olive oil

½ dl lemon juice

Fresh mint

Dill

Chili pepper

Salt

Directions:

- Boil the potatoes until they are soft.
- Peal them and let them cool down.

- Chop up the potatoes, tomatoes, spring onion and onion about 2×2 cm.

- Put them in a bowl.

- Add olive oil, lemon juice, fresh mint leafs, dill, chili pepper and salt.

- Mix and let it rest
for a while.
