Turkish: Börülce Salatasi
Here is one of my favorite salads. It’s especially perfect for hot summer days. My mum and grandmother used to prepare is when I visit them in Turkey. Actually they usually ask me beforehand and when I arrive, a long list of meals, salads and deserts are already waiting for me. I like this way :)
Ingredients for 4 persons:
1 kg of Cow-pea (canned version also works)
1 lemon
3-4 cloves of garlic
1 dl olive oil
Mint
Parsley
Sumac
Salt
Directions:
- Boil cow-peas until soft
(if canned, no need to boil)
- Let it cool down
- Smash the garlic
- Add lemon, garlic, salt, mint, parsley
- Mix all
- Decorate with sumac

Turkish: Kisir
Kisir a very popular, traditional Turkish meze [Wikipedia] or side dish prepared with “bulgur”, tomato paste, parsley, onion, garlic, sour pomegranate juice and a lot of spices. It’s a different version of an Mediterranean/Arabic dish, Tabbouleh [Wikipedia].I think the main difference between these two dishes that the Turkish version has tomato and pepper paste. Kisir recipe varies from region to region. In some regions they add water, while they knead bulgur with tomato and pepper paste in some other regions. However kisir is made everywhere in Turkey. Kisir is served sometimes with the afternoon tea, sometimes as meze, and sometimes as a great summer dish.
Ingredients for 4 persons:
5 dl fine bulgur
5 dl hot water
1 tbsp tomato paste
1 tbsp pepper paste (preferably hot)
~1 dl olive oil
½ bunch green onions(spring onions), finely chopped
1 onion, cut in thin half rounds
1 bunch parsley, finely chopped
1 cucumber, finely chopped
2 green peppers, finely chopped
2 tbsp pomegranate syrup
1 lemon (add more or less lemon juice depending on the taste)
2 tsp red pepper flakes
1tsp ground black pepper
1 tsp mint flakes
1 tsp cumin
salt
tomatoes, sliced
lettuce leaves
Directions:
- Put tomato and pepper paste in a big bowl and melt them in boiling water. Add bulgur and 1 tsp salt into this mix. Stir once. Cover and let it soak the water for about 10 minutes.
- Chop the onion in half-moon shapes. Knead onion with 1 tsp salt in a little bowl. Rinse, salt and squeeze excessive water.
Fluff bulgur with a fork. Add pepper flakes, ground pepper, cumin, mint flakes, oil, pomegranate syrup, lemon juice, and knead onion. Mix well. Taste to see if it needs more lemon juice at this point. It should be a little sour.
- Add green peppers, spring onions, cucumber, and parsley. Mix well.
Serve kisir with lettuce leaves and tomatoes. Just wrap some kisir on a lettuce leave and eat like that. Kisir is usually served on a lettuce bed with slices of tomato on the side. Enjoy!

Turkish: Barbunya Salatasi
This salad reminds me of Norway. I have been there a couple of times during the last tree years. It is an amazing place. Doesn’t matter which direction you look, it’s like a poster. The nature is fantastic, the country is full of mountains, valleys, glaciers and fjords. The ocean is crystal clean, it’s a pleasure to paddle. Norway is one of those places you must see. You will love it!
I paddled in Lofoten, climbed a glacier and skied in Okstindan, a mountain range. We had an exciting competition the last day of the kayaking, the best tree course kayaking dinner of the year :). I and my tent-mate Fanny joined with an African meal and a Turkish salad. Unfortunately we didn’t have time to prepare a dessert, but everyone liked our salad. It won a prize, the best starter. It was fun and it was nice to taste all the desserts :). Here is the prize winner recipe:
Ingredients for 4 persons:
~400g canned kidney beans
1 middle size onion
2 spring onions with green leafs (We didn’t use for this time)
6 tomatoes
2 green pepper
Fresh mint, dill and parsley
Chili
Salt
½ dl olive oil
½ dl lemon juice
Directions:
- Rinse the kidney beans.
- Chop the tomatoes, green peppers, onion and spring onions into small pieces.
- Add the herbs, salt, olive oil and lemon juice. (Save a bit of the dill for decoration.)
- Gently mix them and put on a wide plate.
- As decoration, put the chili and rest of the dill on top.
You may add feta cheese as well.

Turkish: Patates Salatasi
One of my favorite salads. Perfect for hot summer days. It’s a little sour. I recommend it with yoghurt. If you like potato you will like this salad.
Ingredients for 4-5 persons:
8 Potatoes
4 Tomatoes
2 Spring Onions
1 Onion
½ dl olive oil
½ dl lemon juice
Fresh mint
Dill
Chili pepper
Salt
Directions:
- Boil the potatoes until they are soft.
- Peal them and let them cool down.
- Chop up the potatoes, tomatoes, spring onion and onion about 2×2 cm.
- Put them in a bowl.
- Add olive oil, lemon juice, fresh mint leafs, dill, chili pepper and salt.
- Mix and let it rest for a while.
Ready to serve..

Gravlax is a Scandinavian dish consisting of raw salmon cured in salt, sugar and dill. Usually served thinly sliced as an appetizer. The word gravlax comes from the Scandinavian word grav, which means literally grave or hole in the ground (in Swedish, Norwegian, Danish and Estonian), and lax (or laks), which means salmon. During the Middle Ages, gravlax was made by fishermen, who salted the salmon and lightly fermented it by burying it in the sand above the high-tide line. [Wikipedia]
Last week we had a pack of gravlax, two boiled potatoes and some spring onions in need of being eaten. This is what I did:
Ingredients:
1 onion
½ leek (alt. 2 spring onions or one more onion)
2 boiled potatoes
150 g mushroom (champinjon)
1 avocado
200 g gravlax or smoked salmon
2 dl Turkish yogurt
Juice from a lemon
A bunch of rucola
½ dl olive oil
Salt
Ground pepper
Dill
Mint
Directions:
- Chop onion and leek small. Fry in olive oil on low heat until soft.
- Add chopped potatoes. (~2 cm)
- Let it cool down while chopping avocado, mushrooms and fish.
- Add chopped vegetables and lemon juice.
- Add yogurt, ground pepper, dill, mint, salt and mix gently.
- For best result, let this wait for some hours.
- Place rucola at the top of the rest before serving.
- Pour olive oil over and sprinkle some last drops of lemon juice and salt over it.
This recipe is for 3 persons.
