Turkish: Börülce Salatasi
Here is one of my favorite salads. It’s especially perfect for hot summer days. My mum and grandmother used to prepare is when I visit them in Turkey. Actually they usually ask me beforehand and when I arrive, a long list of meals, salads and deserts are already waiting for me. I like this way :)
Ingredients for 4 persons:
1 kg of Cow-pea (canned version also works)
1 lemon
3-4 cloves of garlic
1 dl olive oil
Mint
Parsley
Sumac
Salt
Directions:
- Boil cow-peas until soft
(if canned, no need to boil)
- Let it cool down
- Smash the garlic
- Add lemon, garlic, salt, mint, parsley
- Mix all
- Decorate with sumac

Turkish: Firinda Balik Pilaki
Pilaki is a style of Turkish meze [Wikipedia] and may refer to several dishes that are cooked in a sauce made out of onion, garlic, carrot, potato, tomato or tomato paste, sugar, and olive oil. Beans prepared in this style (fasulye pilaki, with white beans, or barbunya pilaki, with borlotti beans) are served cold, garnished with parsley and slices of lemon. Fish pilaki is also a popular recipe. In Greek cuisine, this style is known as plaki.
Ingredients for 4 persons:
3-4 tbsp olive oil
4-6 fish fillets
1 onion, halved and thinly sliced
3-4 garlic cloves, thinly sliced
1 carrot, thinly sliced
1 potato, petite diced
2-3 tomatoes, diced
1/2 bunch parsley, chopped
juice of 1 lemon
1 lemon, thinly sliced
1 tsp sugarsalt&pepper
optional mushroom
celery root, petite diced
Directions:
- Heat olive oil. Add onion. Cook until soft.
- Add carrot. Cook for a couple of minutes. (if you are using mushroom, add now)
- Add potato. (if you are using celery root, add now). Cook until vegetables are soft.
- Add tomato, garlic, sugar, salt, and 5 dl of water. Cook until the cooking liquid is almost absorbed. Add half the parsley.
- Spread half of the vegetables on a oven dish. Place the fish on top.
- Cover with the rest of the vegetables.
- Season with black pepper. Pour lemon juice and place lemon slices on top.
- Cover and bake in a preheated oven at 180-190 C for 30 minutes or until the fish is tender.
- Sprinkle remaining parsley and serve

Turkish: Haydari
This is probably one of the most popular side dishes in Turkey. We usually have it with raki [Wikipedia]. In Turkey, raki is the unofficial “national drink” and it is traditionally drunk mixed with water; the dilution causes this alcoholic drink to turn a milky-white color, and possibly because of its color, this mixture is popularly called aslan [Wikipedia] sutu (or arslan sutu), literally meaning “lion’s milk” (a(r)slan is also used to mean strong, brave man, hence milk for the brave).
Ingredients:
2 dl creamy yogurt
2 garlic cloves
2 tbsp dill
Pinch of cayenne pepper
Pinch of crushed red pepper
Salt
Directions:
- Smash the garlic with salt
- If you have fresh dill, chop it
- Mix all the ingredients and let it settle in the fridge for half an hour
- Pour some extra virgin olive oil on top.
- You may garnish with some black olives and radish.
