This is a delicious pie (or quiche if you want to be precise), perfect for gluten sensitive people as well as anyone who loves spinach and potato, like me. It takes a while to prepare, but it is well worth it! And why not prepare a bit extra for tomorrow as well?
Ingredients for 4:
5 dl grated potato (firmly-packed)
4 eggs
1 dl grated onion
200 g spinach (thawed if frozen)
1 dl low-fat ricotta cheese
150 g feta cheese
1 dl parmesan cheese
black pepper
salt
oil (canola, olive or your own favorite)
Directions for the crust:
- Preheat oven to 200 °C
- Mix potato and a tea spoon of salt and let drain for 15min in a strainer
- Oil a 25 cm pie plate while waiting
- Press down on the potatoes with paper towels to squeeze out the excess moisture.
- Beat one egg lightly in a medium sized bowl.
- Add the potato and onion and mix.
- Press the potato mixture into the bottom and up the sides of the prepared pie plate.
- Bake for 20 minutes. Brush the top lightly with oil and bake another 15-20 minutes until the crust is lightly golden. Do not over bake.
Directions for the filling:
- Beat the remaining 3 eggs in a large bowl. (If you wish to cut down on the fat, replace two of the eggs with three egg whites.)
- If you use frozen spinach, squeeze moisture out in a kitchen towel.
- Grid the hard cheese (keep separate), and dice the feta cheese.
- Add ricotta, feta and spinach to the egg and mix well.
- Add salt, black pepper and chili according to taste.
- Spread the spinach mixture on top of the prepared potato crust and top with parmesan cheese.
- Bake 30 minutes until the quiche is browned.
- Remove from the oven and allow the quiche to cool at least 15 min. (If you cut the quiche too early, it will be runny.)
Serve with a fresh salad and newly-baked bread.

Turkish: Peynirli pogaca My grand mother used to prepare these tasty pastries when I was child and she still does them. There are many versions of this pastry, and it’s completely up to you to choose what to put in it. It can be cheese, herbs, vegetables, minced meet or a mix. It’s easy to prepare and you don’t have to wait for a long time for dough to ferment.
Ingredients for 4 persons: 
6 dl flour
1 egg
1 tsp salt
1 dl oil
1 dl milk
2 dl yogurt
1 pack yeast (11 gr powder or 25 gr fresh)
200 gr feta cheese
Black cumin
Sesame
Directions:
- Put the flour in a bowl and mix the powder yeast in it
- Add the white of egg, yogurt, oil and salt and knead it finely
- Cover with a moist fabric and let it rest for 40 minutes in room temperature
- Prepare balls as big as walnut, put cheese inside and put on the oiled oven tray
- Wipe egg yolk on the dough balls and decorate with black cumin and sesame
- Heat up the oven to 180 C and put the dough inside
- Wait until the savory pastry gets a brownish color on them

Turkish: Peynir Helvasi
Cheese, a palate-pleaser for all seasons. From a humble breakfast to the most sumptuous feast, cheese and its delights never fail to grace the table. And it was discovered purely by accident..
Fromage to the French, queso to the Spanish, kase to the Germans, sir to the Russians and Bosnians, penir to the Iranians, paneer to the Indians, cebn or cubn to the Arabs, tiri to the Greeks and agrimsik, sogut, bislak or irimcik to the ancient Turks, cheese today continues to be a staple food item as it has been since time immemorial. The history of cheese goes back so far that nothing is known for certain about how or when it was first produced. There are only conjectures based on assumptions.
Ingredients for 4 persons:
1300 gr full-fat feta cheese
200 gr granulated sugar
100 gr flour
1 tbsp butter
1 tbsp powdered sugar
Some berries for decoration
Directions:
- Let the cheese stand in water to remove the salt for a while
- Place the cheese in a pot, add sugar and flour and mix for 10-12 minutes on medium heat
- When the mixture forms a ball, remove from the fire
- Place it on a greased baking sheet and spread flat with your fingers
- Cook at 150 degrees in the oven for 15 minutes
- Sprinkle with the powdered sugar and serve warm
