Best-ever Brownies

Yes, they really are the best brownies ever. After your friends try them, they will beg you for the recipe!  I got the recipe from a friend, who got it from a friend, who had found it on internet. If you can resist eating them all at once, you can store them in an air-tight container in the fridge up to a month.

Ingredients for 18-24 pieces:

200 gr butter
250 gr dark chocolate
50 gr white chocolate
3 eggs
3¼ dl sugar
1½ dl plain flour
¾ dl cocoa powder

Directions:

  • Cut the butter into cubes
  • Break 200 gr of the dark chocolate into pieces
  • Mix butter and chocolate and melt – stir in between
  • Let the mixture cool to room temperature
  • Chop the rest of the chocolate (dark and white) into chunks
  • Turn on the oven on 200 C
  • Line a square oven tray with non-stick parchment paper
  • Whisk eggs and sugar in high speed until thick, pale and creamy
  • Pour the cooled chocolate mixture over the eggy mousse
  • Blend gently by using a rubber spatula, until even dark brown
  • Mix flour and cocoa powder and pour over the eggy chocolate, preferably through a sieve
  • Gently blend the mixture throughout
  • Stir in the dark and white chocolate chunks evenly
  • Pour the mixture into the paper covered oven tray and spread evenly
  • Place in the oven for 20 min
  • If still wobbly in the middle when shaking, add another 5-10 min
  • Let cool in the tray
  • Cut into squares and cut the squares into triangles

Rita's Berry Cake

This is my mum’s standard cake when we are visiting. Why? It’s easy, it’s sweet for A, a bit sour for me, and not too unhealthy.

Ingredients for 8:Ritas berry cake

Ready pie dough with oat (“mördeg”)

Filling:
3 dl vanilla yogurt
2 eggs
2 tbsp sugar
1/2 lemon
2 dl berries (or 1dl jam) **

** I used the classic mix of blueberries and raspberries.

Directions:

- Spread the pie dough in a pie form. (ø 30 cm) Make sure it is covering both bottom and sides.
- Whip eggs and yogurt
- Add gridded lemon peel and a little lemon juice (can be left out if you are not a fan of sour)
- Add sugar and mix until smooth
- Spread the mixture in the pie form
- Add berries on top
- Place in the middle of the oven, in 200 C for 30 min, until the edges become brown and the filling is no longer loose.

Enjoy with a cup of coffee or juice!

Cheese Halva

Turkish: Peynir Helvasi

Cheese, a palate-pleaser for all seasons. From a humble breakfast to the most sumptuous feast, cheese and its delights never fail to grace the table. And it was discovered purely by accident..

Fromage to the French, queso to the Spanish, kase to the Germans, sir to the Russians and Bosnians, penir to the Iranians, paneer to the Indians, cebn or cubn to the Arabs, tiri to the Greeks and agrimsik, sogut, bislak or irimcik to the ancient Turks, cheese today continues to be a staple food item as it has been since time immemorial. The history of cheese goes back so far that nothing is known for certain about how or when it was first produced. There are only conjectures based on assumptions.

Ingredients for 4 persons:Cheese halva

1300 gr full-fat feta cheese
200 gr granulated sugar
100 gr flour
1 tbsp butter
1 tbsp powdered sugar
Some berries for decoration

Directions:

- Let the cheese stand in water to remove the salt for a while
- Place the cheese in a pot, add sugar and flour and mix for 10-12 minutes on medium heat
- When the mixture forms a ball, remove from the fire
- Place it on a greased baking sheet and spread flat with your fingers
- Cook at 150 degrees in the oven for 15 minutes
- Sprinkle with the powdered sugar and serve warm
